Chickizzas



OK so this is a ridiculously simple recipe that takes little effort to make and yet is super nutritious, full of protein and fun for kids and adults alike. I was inspired by a gorgeous friend of mine who is a passionate nutrition student and works tirelessly in the kitchen inventing and trying out recipes. Thank you Alanna!

Apparently you can do this with flattened out chicken thigh fillets, but I happened to come across some chicken schnitzel breast fillets (raw and unprepared) so I used them instead.

Ingredients:

  • 3-4 raw chicken breasts cut thin as if for schnitzels

  • tomato paste

  • vegetable toppings of your choice and optional shredded coconut cheese

Method:

Pre-heat the oven (200 degrees C) - I used grill and fan forced. Place the chicken pieces on a baking tray lined with baking paper. Top each piece with tomato paste, finely chopped veggies and shredded cheese. Sprinkle with herbs and pop in the oven for about 25 mins checking occasionally to make sure they don't burn. Serve as is or with a side of sweet potato shoe string fries. Enjoy!
