Coconut Ice cream or Slushy with a twist of lemon




This is a quick recipe to make a home made version of slushy style ice-cream which is gluten free, dairy free and super yummy and refreshing. You need a little bit of planning ahead in order to freeze some of the ingredients, but other than that it is super quick and easy to make. Blitzed up in minutes!

Ingredients:

  • 250-500mls Coconut water - frozen in ice cube trays!

  • 3-4 Tbsp coconut cream

  • a small dash of Maple Syrup

  • Optional: a drop or two of Lemon essential oil

Method:

In a food processor blitz up the ingredients until a smooth slushy consistency is achieved and serve immediately in small bowls or in slushy cups and a straw!
