This is a twist on an earlier recipe of Banana Bread... Essentially the recipe is the same, but has carob added to it to give it a more chocolate like look and taste and instead of a cake, it is made into muffins.
Ingredients:
2 medium size or 3 small bananas
2 large or 3 small eggs
1/4 cup of maple syrup or honey (optional)
1&1/2 cups of Almond meal
1&1/2 tsp baking powder
dash of vanilla powder
3 Tbsp Carob powder
Method: Preheat oven to 180 degrees Celsius. Mix dry ingredients and set aside in a bowl. Blend the bananas, eggs and sweetener if using till smooth and creamy. Then pour the creamy batter into the bowl with the dry ingredients and mix together thoroughly. Line a baking tray with muffin moulds and pour the batter in. Bake in the hot oven for 20-25 mins or till cooked enough so that a knife inserted in the muffins comes out clean. Set aside to cool - then serve up as is, or serve with a side of custard.
