This is a simple side dish that can replace mashed potatoes and bring stacks of nutrients and flavours to enhance your meal. Not so suitable for those who might ferment beans in their guts, but great for those who are trying to get off the starchy carbs and wanting something of similar consistency. Very simple and quick to make and a lovely carb that is balanced with some protein in it!
Ingredients:
1 can borlotti beans, drained and rinsed
1 large Russian Garlic clove or 4 small garlic cloves peeled and crushed.
Olive oil for cooking and some spare to drizzle on top.
Black pepper to taste
Method: Heat the olive oil in a small saucepan and add the crushed garlic. Toss in the hot oil for a minute and then add the beans. Mix thoroughly as this heats up and in the process mash the beans roughly with a wooden spoon. Once heated through take off the stove and place in a serving bowl.
