Roasted Chilli Sauce

Recently I had some lunch at the amazing Belle Central in Ballina Wigmore Arcade...and the beautiful Sarah served me up with some chilli sauce with my meal which inspired me to make my own.

Ingredients:

  • I purchased a very large bagful of large red chillies (medium strength) - I am guessing it was about 500g?

  • I also picked up some fresh Russian garlic cloves - these are very large cloves and when roasted can become creamy in consistency.

Method:

I placed all the chillies and 4 large cloves of garlic on a roasting pan, drizzled them with olive oil and popped them in the oven under the grill (fan forced and grill at 180 degrees) for just under half an hour.

Then pulled them out, removed the chilli stems and peeled the roasted garlic, and placed all the ingredients in my little food processor with a few tablespoons of olive oil and a squeeze or two of lemon. The food processor did all the hard work of pulsing and mincing the roasted spices...so that I could sit down and enjoy the amazing chilli sauce with my meal.

A few suggestions: - you can add more olive oil or lemon juice or a small amount of water to make the paste more runny. - I also did a second lot with large green chillies which was just as amazing.
