This is a simple and quick soup to make, busting with nutrients.
To build it up you can also add a can of tuna and some fried greens (recipe for the greens to come next week).
Ingredients:
5 shallots, chopped fine
Olive oil for sautéing the shallots Spices of your choice (I used sumac, parsley, dill...)
3 heads of Broccoli, chopped up
1 handful of mixed dried sea weed (soak this in water first)
250 mis vegetable stock
Extra water as required
Method:
Sauté the shallots in the olive oil in a large pan till slightly browned. Then add the broccoli pieces and the spices stir-ing through, top up with the vegetables stock and add the seaweed, then add more water if needed till the vegetables are almost covered but not quite. Bring to a boil then simmer for about 20 mins or till the vegetable are tender. Then allow to cool slightly before blending with a food processor till it reaches the desired consistency (smooth or chunky).
