This is an all time favourite of mine that a very inspiring friend and naturopath shared a few years ago. It is super simple and quick to make, packed with protein and nutrients to build the body. I have since put my own little twists into it but the basic ingredients still stay the same.
Ingredients:
1 medium to large raw chicken breast
3 eggs
1 tsp curry powder
1/2 cup fresh chives, chopped
1/4 cup fresh parsley, chopped
Dash of salt (optional)
1 tsp flaxmeal (optional)
Method: Cut the large chicken breast into 3 pieces, place all the ingredients into the hand held blender and blend till the chicken meat is smoothly mixed in with the egg batter and spices - this should take less than 10 seconds and you should have a thick liquid consistency to the batter (no big chicken pieces and no stringy bits eaither). Heat up a frying pan, add a dash of oil and fry the batter in small batches till about 70% cooked on one side and then flip over and cook the other side briefly. Serve with salad and greens as a meal or spread some avocado on top and have as finger food or as a snack through the day.
