This is a great lunch box snack for kids (or adults) which is naturally sweetened with the bananas. You can add sweetener to make it more like a cake too if you like. Because the base is made from Almond meal, it has a higher protein and fat content than breads made with flour and hence is more filling, more nutrient rich and does not spike blood sugar levels as much.
Ingredients:
2 medium size or 3 small bananas
2 large or 3 small eggs
1/4 cup of maple syrup or honey (optional)
1&1/2 cups of Almond meal
1&1/2 tsp baking powder
dash of vanilla powder
Method:
Preheat oven to 180 degrees Celsius. Mix dry ingredients and set aside in a bowl. Blend the bananas, eggs and sweetener if using till smooth and creamy. Then pour the creamy batter into the bowl with the dry ingredients and mix together thoroughly. Line a bread baking dish with baking paper and pour the batter in. Bake in the hot oven for 35-45 mins or till cooked enough so that a knife inserted in the bread comes out clean. Set aside to cool - then slice and serve up as is, or serve with a side of custard.
You can also add extra ingredients such as walnuts and/or chocolate chips to this recipe to increase crunch and make it even more desert like!
