Sweet potato is a starchy root that is a great substitute for conventional white potatoes. Sweet potatoes don't tend to spike blood sugar levels as much and can be a lovely side to your main meal especially if you are trying to give up regular potatoes. Just remember that sweet potatoes still have the 'sweetness' and hence the sugar effect and are best enjoyed on occasion and in small amounts. Method:
To make, simply julienne the peeled sweet potatoes and lay them on a baking sheet in the oven at 180 degrees with a slight drizzle of olive oil and some herbs and bake till desired consistency- you can bake them till soft and squishy or till crunchy!
