This home made nut granola is a healthy alternative to supermarket breakfast cereals. It is simple and easy to make with a selection of nuts and seeds of your choice and is super tasty! It also has lots of versatility in that you can use it as a cereal base for breakfast, have it as a snack or use it as a base for a slice such as a vegan cheese cake or lemon-lime slice.
Ingredients:
Macadamia oil (about 1/3-1/2 cup)
Honey (about 1/3-1/2 cup)
1 cup Pecan nuts
1 cup Macadamia nuts
1 cup Peanuts
1 cup Almonds
Optional spices nutmeg and cinnamon.
And feel free to add or substitute for other nuts and seeds or sweeteners depending on your preferences or dietary needs.
Method: Pre heat the oven to 180 degrees Celsius, fan forced and with grill on. Blitz the nuts briefly in a blender till the desired consistency is achieved (I like some larger chunky bits mixed with some finer pieces). Mix all ingredients together and spread out on a roasting tray covered in heavy duty aluminium foil. Place in the oven and roast till slightly browned, mixing the nuts so that they brown evenly. Take out to cool and place in containers that seal well to keep fresh. You can freeze some of the granola so that it stays fresh and crunchy. Enjoy with Almond milk as a breakfast cereal, sprinkle on top of coconut yoghurt with fresh strawberries as a snack, or use as a base for a dessert.
